Barbarian Beef Stew

Ingredients
  

  • 2 lbs beef chuck cut into chunks
  • 2 tbsp olive oil
  • 1 large onion chopped
  • 3 garlic cloves minced
  • 3 large carrots chopped
  • 2 potatoes diced
  • 4 cups beef broth
  • 1 cup red wine (optional, but recommended for true warrior depth)
  • 2 tbsp tomato paste
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 bay leaf
  • 1 cup mushrooms (optional)

Instructions
 

  • In a large pot, heat olive oil over medium-high heat. Brown the beef chunks on all sides, then remove and set aside.
  • In the same pot, sauté onions and garlic until fragrant. Add carrots, potatoes, and mushrooms.
  • Stir in tomato paste, smoked paprika, thyme, salt, and pepper. Cook for another minute.
  • Pour in the red wine, scraping up any browned bits from the bottom of the pot. Let it simmer for a few minutes.
  • Add the beef back to the pot, then pour in the beef broth and toss in the bay leaf.
  • Cover and let it simmer on low heat for 2 hours until the meat is tender and the flavors meld.
  • Remove bay leaf, serve hot, and enjoy like a true warrior.

Notes

  • Wine Substitute: If you don’t have red wine on hand, use additional beef broth with a splash of balsamic vinegar for depth.
  • Make it Thicker: If you prefer a thicker stew, remove the lid during the last 30 minutes of simmering or stir in a tablespoon of flour mixed with cold water.
  • Customize the Veggies: Parsnips, turnips, or celery root can be swapped in for carrots or potatoes to suit your local bounty.
  • Make it Ahead: This stew tastes even better the next day. Great for meal prep or freezing in batches.
  • Double It: Feeding a whole warband? This recipe easily doubles in a large enough pot.
